Stuffed Beef Roll-Ups
Found this in my mother’s church cookbook from the ladies auxiliary and it disappeared at Easter dinner. Tender beef rolls stuffed with savory filling and baked in rich buttery juices make this comforting classic impossible to resist.
Ingredients
- 8 thin beef sirloin slices
- 2 cups stuffing mix
- 1/2 cup diced celery
- 1/2 cup diced onion
- 1/4 cup melted butter
- 1 cup beef broth
- 1 teaspoon garlic powder
- Salt and black pepper to taste
- Toothpicks for securing
Instructions
- Preheat oven to 375°F (190°C).
- Prepare stuffing mix according to package directions.
- Mix stuffing with celery, onion, and melted butter.
- Lay beef slices flat and season with salt, pepper, and garlic powder.
- Spoon stuffing mixture onto each slice.
- Roll tightly and secure with toothpicks.
- Place roll-ups seam side down in a greased baking dish.
- Pour beef broth around the rolls.
- Cover loosely with foil and bake for 35 minutes.
- Remove foil and bake another 10 minutes until browned.
Serving Suggestions
- Serve with mashed potatoes
- Pair with roasted carrots or green beans
- Spoon pan juices over the top before serving
Tip: Add chopped mushrooms to the stuffing mixture for extra flavor.
