Slow Cooker Beef and Noodles
My dad requests this comfort dish every single weekend. It is unbelievably simple, yet the rich savory gravy and tender beef make it taste like it simmered all day in Grandma’s kitchen.
Ingredients
- 2 lbs beef stew meat or chuck roast, cubed
- 1 packet brown gravy mix
- 3 cups beef broth
- 12 oz egg noodles
Instructions
- Place the beef in the slow cooker.
- Sprinkle the gravy mix over the meat.
- Pour in the beef broth and stir gently.
- Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours.
- About 30 minutes before serving, stir in the egg noodles.
- Cover again and cook until the noodles are tender.
- Stir well and serve hot with plenty of gravy.
Serving Suggestions
- Serve with buttery dinner rolls.
- Add a side of green beans or peas.
- Top with chopped parsley for a little freshness.
Tip: If using chuck roast, shred the meat with two forks before adding the noodles for an extra tender texture.
