3-Ingredient Pork Roast and Onions

My uncle passed down this incredibly easy vintage dinner. Only 3 ingredients to get mouthwatering sweet and savory flavors.

Ingredients

  • 1 boneless pork loin roast (3–4 lbs)
  • 2 large onions, sliced
  • 1 can (12 oz) ginger ale or lemon-lime soda

Instructions

  1. Place the sliced onions in the bottom of the slow cooker.
  2. Set the pork roast on top of the onions.
  3. Pour the ginger ale evenly over the roast.
  4. Cover and cook on LOW for 6–8 hours or HIGH for 4–5 hours.
  5. Remove the roast and let it rest for 10 minutes before slicing.
  6. Serve with the softened onions and cooking juices spooned over the top.

Serving Suggestions

  • Serve with mashed potatoes or rice.
  • Pair with roasted carrots or green beans.
  • Use leftovers for sandwiches the next day.

Tip: The soda helps tenderize the pork while the onions slowly caramelize, creating a naturally sweet and flavorful sauce.
