3-Ingredient Pork Roast and Onions
My uncle passed down this incredibly easy vintage dinner. Only 3 ingredients to get mouthwatering sweet and savory flavors.
Ingredients
- 1 boneless pork loin roast (3–4 lbs)
- 2 large onions, sliced
- 1 can (12 oz) ginger ale or lemon-lime soda
Instructions
- Place the sliced onions in the bottom of the slow cooker.
- Set the pork roast on top of the onions.
- Pour the ginger ale evenly over the roast.
- Cover and cook on LOW for 6–8 hours or HIGH for 4–5 hours.
- Remove the roast and let it rest for 10 minutes before slicing.
- Serve with the softened onions and cooking juices spooned over the top.
Serving Suggestions
- Serve with mashed potatoes or rice.
- Pair with roasted carrots or green beans.
- Use leftovers for sandwiches the next day.
Tip: The soda helps tenderize the pork while the onions slowly caramelize, creating a naturally sweet and flavorful sauce.
