4-Ingredient Onion Braised Beef Roast

My mom requested this melt-in-your-mouth dinner for her special Sunday. Just 4 ingredients for one of the most tender beef meals you’ll ever make.

Ingredients

  • 3–4 lb beef chuck roast
  • 2 large onions, sliced
  • 1 packet dry onion soup mix
  • 1 can (10.5 oz) condensed beef broth

Instructions

  1. Place the sliced onions in the bottom of a slow cooker.
  2. Set the beef roast on top of the onions.
  3. Sprinkle the onion soup mix evenly over the roast.
  4. Pour the condensed beef broth around the meat.
  5. Cover and cook on LOW for 8–10 hours or HIGH for 5–6 hours.
  6. Once fork-tender, transfer the roast to a cutting board and let rest for 10 minutes.
  7. Slice or shred the beef.
  8. Spoon the caramelized onions and rich gravy over the meat before serving.

Serving Suggestions

  • Serve over mashed potatoes, rice, or buttered egg noodles.
  • Pair with roasted carrots or green beans.
  • Use leftovers for sandwiches the next day.

Tip: For a thicker gravy, remove 1 cup of cooking liquid, whisk with 1 tablespoon cornstarch, and simmer until thickened before serving.
