Slow Cooker Classic Meatloaf

This old-fashioned slow cooker meatloaf is packed with flavor and topped with a sweet ketchup glaze. It cooks low and slow until tender, making it the perfect Sunday family dinner.

Ingredients

  • 2 lbs (900 g) ground beef
  • 1 cup breadcrumbs
  • 1 small onion, finely diced
  • 1 green bell pepper, finely diced
  • 2 eggs
  • 1 cup ketchup
  • 2 tablespoons brown sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, onion, bell pepper, eggs, garlic powder, salt, and pepper.
  2. Mix until well combined.
  3. Shape the mixture into a loaf and place it in the slow cooker.
  4. In a small bowl, stir together ketchup and brown sugar.
  5. Spread the ketchup glaze evenly over the meatloaf.
  6. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  7. Check that the internal temperature reaches 160°F (71°C).
  8. Let rest for 10 minutes before slicing.
  9. Serve with mashed potatoes or vegetables.

Optional Additions

  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1/2 cup shredded cheddar cheese
  • Fresh parsley for garnish

Serves 6–8 people.
