Slow Cooker Classic Meatloaf
This old-fashioned slow cooker meatloaf is packed with flavor and topped with a sweet ketchup glaze. It cooks low and slow until tender, making it the perfect Sunday family dinner.
Ingredients
- 2 lbs (900 g) ground beef
- 1 cup breadcrumbs
- 1 small onion, finely diced
- 1 green bell pepper, finely diced
- 2 eggs
- 1 cup ketchup
- 2 tablespoons brown sugar
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- In a large bowl, combine ground beef, breadcrumbs, onion, bell pepper, eggs, garlic powder, salt, and pepper.
- Mix until well combined.
- Shape the mixture into a loaf and place it in the slow cooker.
- In a small bowl, stir together ketchup and brown sugar.
- Spread the ketchup glaze evenly over the meatloaf.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
- Check that the internal temperature reaches 160°F (71°C).
- Let rest for 10 minutes before slicing.
- Serve with mashed potatoes or vegetables.
Optional Additions
- 1 tablespoon Worcestershire sauce
- 1 teaspoon smoked paprika
- 1/2 cup shredded cheddar cheese
- Fresh parsley for garnish
