Cheesy Tomato Beef Macaroni Bake
This simple one-pan casserole combines elbow macaroni, juicy diced tomatoes, seasoned ground beef, and plenty of melted cheese for an easy comfort-food dinner the whole family will love. It’s hearty, cheesy, and perfect for busy weeknights.
Ingredients
- 2 cups uncooked elbow macaroni
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 pound lean ground beef
- 2 cups shredded cheddar cheese
- 2 cups beef broth
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and black pepper, to taste
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- Brown the ground beef in a skillet over medium heat. Drain excess grease and season with garlic powder, onion powder, salt, and pepper.
- Spread the uncooked elbow macaroni evenly into the baking dish.
- Top with the cooked ground beef.
- Pour the diced tomatoes and beef broth evenly over the macaroni.
- Sprinkle with the Italian seasoning and gently stir to combine.
- Cover tightly with aluminum foil and bake for 45 minutes.
- Remove the foil, sprinkle the cheddar cheese evenly over the top, and bake another 10–15 minutes until the cheese is melted and bubbly.
- Let the casserole rest for 5 minutes before serving. Garnish with parsley if desired.
