Cheesy Tomato Beef Macaroni Bake

This simple one-pan casserole combines elbow macaroni, juicy diced tomatoes, seasoned ground beef, and plenty of melted cheese for an easy comfort-food dinner the whole family will love. It’s hearty, cheesy, and perfect for busy weeknights.

Ingredients

  • 2 cups uncooked elbow macaroni
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 pound lean ground beef
  • 2 cups shredded cheddar cheese
  • 2 cups beef broth
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper, to taste
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Brown the ground beef in a skillet over medium heat. Drain excess grease and season with garlic powder, onion powder, salt, and pepper.
  3. Spread the uncooked elbow macaroni evenly into the baking dish.
  4. Top with the cooked ground beef.
  5. Pour the diced tomatoes and beef broth evenly over the macaroni.
  6. Sprinkle with the Italian seasoning and gently stir to combine.
  7. Cover tightly with aluminum foil and bake for 45 minutes.
  8. Remove the foil, sprinkle the cheddar cheese evenly over the top, and bake another 10–15 minutes until the cheese is melted and bubbly.
  9. Let the casserole rest for 5 minutes before serving. Garnish with parsley if desired.
