Slow Cooker Apple Cider Pork Roast
This Slow Cooker Apple Cider Pork Roast is unbelievably tender, juicy, and packed with sweet-savory flavor. The pork slowly cooks with apples, onions, and apple cider until it falls apart with a fork, creating a rich gravy that’s perfect for a cozy family dinner.
Ingredients
- 3–4 lb boneless pork shoulder (or pork loin roast)
- 2 large apples, peeled and diced
- 1 large onion, sliced
- 1 cup apple cider (or apple juice)
- 2 tablespoons brown sugar
- 2 tablespoons Dijon mustard
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons cornstarch mixed with 2 tablespoons cold water (optional, for thickening)
Instructions
- Place the diced apples and sliced onions in the bottom of the slow cooker.
- Season the pork roast with salt, pepper, paprika, and thyme.
- Place the roast on top of the apples and onions.
- Whisk together the apple cider, brown sugar, Dijon mustard, and garlic. Pour the mixture over the roast.
- Cover and cook on LOW for 8–9 hours or on HIGH for 5–6 hours, until the pork is fork tender.
- Transfer the pork to a cutting board and shred it with two forks.
- If desired, thicken the cooking juices with the cornstarch slurry for the last 15–20 minutes.
- Serve the shredded pork with the apples, onions, and gravy spooned over the top.
