Slow Cooker Cabbage and Potatoes

This rustic slow cooker cabbage and potatoes recipe is a simple, budget-friendly comfort meal. Tender cabbage wedges, baby potatoes, onions, and garlic slowly simmer in a flavorful broth until perfectly soft and delicious.

Ingredients

  • 1 medium green cabbage, cut into 8 wedges
  • 1½ lbs (700 g) baby Yukon Gold potatoes
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 3 cups vegetable or chicken broth
  • 2 tablespoons butter
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Place the diced onion and minced garlic in the bottom of the slow cooker.
  2. Add the baby potatoes.
  3. Arrange the cabbage wedges on top.
  4. Pour the broth over the vegetables.
  5. Dot the butter over the cabbage and potatoes.
  6. Sprinkle with Italian seasoning, salt, and black pepper.
  7. Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until the vegetables are tender.
  8. Carefully serve the cabbage wedges with the potatoes and spoon some of the flavorful broth over the top.
  9. Garnish with fresh parsley before serving if desired.

Optional Additions

  • 1 lb smoked turkey sausage or smoked beef sausage, sliced
  • 2 carrots, sliced
  • 1 teaspoon paprika
  • 1 tablespoon Worcestershire sauce
  • Red pepper flakes for a little heat
