Crock Pot Creamy Mushroom Chicken Thighs
This easy slow cooker chicken dinner is rich, creamy, and packed with comforting flavor. Tender chicken thighs simmer in a savory mushroom sauce with just a few pantry staples, making it the perfect weeknight family meal.
Ingredients
- 2 lbs (900 g) boneless, skinless chicken thighs
- 1 (10.5 oz) can cream of mushroom soup
- 1 packet (1 oz) dry onion soup mix
- 1 cup chicken broth
- 8 oz fresh mushrooms, sliced
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1 tablespoon chopped fresh parsley (optional)
Instructions
- Lightly season the chicken thighs with garlic powder and black pepper.
- Arrange the chicken in the bottom of the slow cooker.
- Scatter the sliced mushrooms over the chicken.
- In a bowl, whisk together the cream of mushroom soup, chicken broth, and onion soup mix until smooth.
- Pour the mixture evenly over the chicken.
- Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until the chicken is tender.
- Stir the sauce gently before serving.
- Garnish with fresh parsley if desired.
- Serve over mashed potatoes, rice, buttered noodles, or with crusty bread.
Optional Additions
- 1/2 cup sour cream (stir in during the last 20 minutes)
- 1/2 cup shredded Parmesan cheese
- 1 teaspoon Italian seasoning
- 1 tablespoon Worcestershire sauce
- Fresh thyme for garnish
