Slow Cooker Garlic Herb Beef Bites

These juicy slow cooker beef bites are simmered in a rich garlic herb sauce until they’re fall-apart tender. With only a few simple ingredients, this recipe is effortless yet packed with flavor, making it perfect for busy weeknights or cozy family dinners.

Ingredients

  • 2½ lbs beef stew meat or chuck roast, cut into 1½-inch cubes
  • 1 medium onion, diced
  • 1 cup beef broth
  • ¼ cup Worcestershire sauce
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • ½ teaspoon black pepper
  • 2 tablespoons tomato paste
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)
  • Fresh parsley for garnish (optional)

Instructions

  1. Add the diced onion to the bottom of the slow cooker.
  2. Place the beef cubes on top.
  3. In a bowl, whisk together the beef broth, Worcestershire sauce, garlic, tomato paste, Italian seasoning, paprika, onion powder, and black pepper.
  4. Pour the sauce evenly over the beef.
  5. Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until the beef is fork tender.
  6. If you’d like a thicker gravy, stir in the cornstarch slurry during the last 20 minutes of cooking.
  7. Garnish with fresh parsley before serving.
