Bacon Wrapped Slow Cooker Pot Roast
This incredibly tender bacon-wrapped pot roast is slow-cooked until it falls apart, then finished in the oven for a crispy bacon crust. With only a handful of ingredients, it’s an easy family dinner that’s packed with rich, smoky flavor.
Ingredients
- 3–4 lb (1.4–1.8 kg) beef chuck roast
- 10–12 slices thick-cut bacon
- 1 packet onion soup mix
- 1 cup beef broth
- 1 teaspoon garlic powder (optional)
- 1/2 teaspoon black pepper
Instructions
- Pat the chuck roast dry and season with black pepper and garlic powder.
- Wrap the entire roast with bacon slices, slightly overlapping each strip.
- Place the roast into the slow cooker.
- Sprinkle the onion soup mix evenly over the top.
- Pour the beef broth around the roast (not directly over the bacon).
- Cover and cook on LOW for 8–9 hours or HIGH for 5–6 hours, until fork-tender.
- Carefully transfer the roast to a foil-lined baking sheet.
- Broil for 4–6 minutes until the bacon becomes crispy and caramelized.
- Let the roast rest for 10 minutes before slicing or shredding.
- Serve with mashed potatoes, roasted vegetables, or dinner rolls.
Optional Additions
- 1 tablespoon Worcestershire sauce
- 1 teaspoon smoked paprika
- Fresh rosemary or thyme
- Sliced onions around the roast
- Mushrooms added during the last 2 hours of cooking
