Bacon Wrapped Slow Cooker Pot Roast

Bacon Wrapped Slow Cooker Pot Roast

This incredibly tender bacon-wrapped pot roast is slow-cooked until it falls apart, then finished in the oven for a crispy bacon crust. With only a handful of ingredients, it’s an easy family dinner that’s packed with rich, smoky flavor.

Ingredients

  • 3–4 lb (1.4–1.8 kg) beef chuck roast
  • 10–12 slices thick-cut bacon
  • 1 packet onion soup mix
  • 1 cup beef broth
  • 1 teaspoon garlic powder (optional)
  • 1/2 teaspoon black pepper

Instructions

  1. Pat the chuck roast dry and season with black pepper and garlic powder.
  2. Wrap the entire roast with bacon slices, slightly overlapping each strip.
  3. Place the roast into the slow cooker.
  4. Sprinkle the onion soup mix evenly over the top.
  5. Pour the beef broth around the roast (not directly over the bacon).
  6. Cover and cook on LOW for 8–9 hours or HIGH for 5–6 hours, until fork-tender.
  7. Carefully transfer the roast to a foil-lined baking sheet.
  8. Broil for 4–6 minutes until the bacon becomes crispy and caramelized.
  9. Let the roast rest for 10 minutes before slicing or shredding.
  10. Serve with mashed potatoes, roasted vegetables, or dinner rolls.

Optional Additions

  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • Fresh rosemary or thyme
  • Sliced onions around the roast
  • Mushrooms added during the last 2 hours of cooking

Servings

Serves 8 people.
