Slow Cooker Tomato Beef Casserole
This easy slow cooker dinner combines ground beef with creamy tomato soup and a few pantry staples for a rich, comforting meal. It’s perfect for busy weeknights and pairs wonderfully with rice, mashed potatoes, or buttered noodles.
Ingredients
- 2 lbs (900 g) lean ground beef
- 2 cans (10.5 oz each) condensed tomato soup
- 1 medium onion, diced
- 1 packet onion soup mix
- 1 cup shredded cheddar cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
Instructions
- Place the ground beef into the slow cooker and break it apart with a spoon.
- Add the diced onion, onion soup mix, garlic powder, and black pepper.
- Pour the tomato soup evenly over the beef.
- Stir gently until everything is well combined.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
- About 15 minutes before serving, stir in the shredded cheddar cheese until melted.
- Serve hot over mashed potatoes, rice, egg noodles, or with crusty bread.
Optional Additions
- 1 diced green bell pepper
- 1 teaspoon Italian seasoning
- 8 oz sliced mushrooms
- Fresh chopped parsley for garnish
