Slow Cooker Tomato Beef Casserole

This easy slow cooker dinner combines ground beef with creamy tomato soup and a few pantry staples for a rich, comforting meal. It’s perfect for busy weeknights and pairs wonderfully with rice, mashed potatoes, or buttered noodles.

Ingredients

  • 2 lbs (900 g) lean ground beef
  • 2 cans (10.5 oz each) condensed tomato soup
  • 1 medium onion, diced
  • 1 packet onion soup mix
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper

Instructions

  1. Place the ground beef into the slow cooker and break it apart with a spoon.
  2. Add the diced onion, onion soup mix, garlic powder, and black pepper.
  3. Pour the tomato soup evenly over the beef.
  4. Stir gently until everything is well combined.
  5. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  6. About 15 minutes before serving, stir in the shredded cheddar cheese until melted.
  7. Serve hot over mashed potatoes, rice, egg noodles, or with crusty bread.

Optional Additions

  • 1 diced green bell pepper
  • 1 teaspoon Italian seasoning
  • 8 oz sliced mushrooms
  • Fresh chopped parsley for garnish

Serves 6–8 people.
