Slow Cooker Garlic Herb Chicken Thighs

These tender chicken thighs slowly simmer in a savory garlic-herb broth, creating a comforting family dinner with minimal preparation. The chicken becomes incredibly juicy and flavorful after hours in the slow cooker.

Ingredients

  • 6 bone-in, skin-on chicken thighs
  • 2 cups chicken broth
  • 1 packet onion soup mix
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon black pepper

Instructions

  1. Arrange the chicken thighs in the slow cooker.
  2. Sprinkle the onion soup mix, garlic, Italian seasoning, and black pepper over the chicken.
  3. Pour the chicken broth evenly into the slow cooker.
  4. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  5. Cook until the chicken is tender and reaches an internal temperature of 165°F (74°C).
  6. Carefully remove the chicken and spoon some of the cooking juices over the top before serving.

Optional Additions

  • 1 cup sliced mushrooms
  • 1 diced onion
  • 1 cup baby carrots
  • Fresh parsley for garnish
