Slow Cooker Tomato Beef Stew

This easy slow-cooker beef dinner combines tender stew meat with tomatoes and simple pantry ingredients for a rich, hearty meal. The beef becomes melt-in-your-mouth tender as it slowly simmers in a savory tomato sauce.

Ingredients

  • 2 lbs (900 g) beef stew meat
  • 2 cans (14.5 oz each) diced tomatoes
  • 1 medium onion, diced
  • 1 packet onion soup mix
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder

Instructions

  1. Pour the diced tomatoes into the slow cooker.
  2. Add the diced onion and sprinkle in the onion soup mix.
  3. Nestle the beef stew meat into the tomato mixture.
  4. Season with black pepper and garlic powder.
  5. Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours.
  6. Once the beef is fork-tender, gently stir everything together.
  7. Taste and adjust seasoning if needed.
  8. Serve hot over mashed potatoes, rice, or egg noodles.

Optional Additions

  • 1 cup sliced mushrooms
  • 2 diced carrots
  • 1 tablespoon Worcestershire sauce
  • Fresh parsley for garnish
