Slow Cooker Tomato Beef Stew
This easy slow-cooker beef dinner combines tender stew meat with tomatoes and simple pantry ingredients for a rich, hearty meal. The beef becomes melt-in-your-mouth tender as it slowly simmers in a savory tomato sauce.
Ingredients
- 2 lbs (900 g) beef stew meat
- 2 cans (14.5 oz each) diced tomatoes
- 1 medium onion, diced
- 1 packet onion soup mix
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
Instructions
- Pour the diced tomatoes into the slow cooker.
- Add the diced onion and sprinkle in the onion soup mix.
- Nestle the beef stew meat into the tomato mixture.
- Season with black pepper and garlic powder.
- Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours.
- Once the beef is fork-tender, gently stir everything together.
- Taste and adjust seasoning if needed.
- Serve hot over mashed potatoes, rice, or egg noodles.
Optional Additions
- 1 cup sliced mushrooms
- 2 diced carrots
- 1 tablespoon Worcestershire sauce
- Fresh parsley for garnish
