This easy baked chicken dinner features juicy chicken pieces coated with ranch seasoning and topped with a buttery herb stuffing mix that bakes into a golden, crispy crust. It’s a simple comfort meal that’s perfect for busy weeknights.

Ingredients

  • 2 pounds boneless, skinless chicken thighs or breasts, cut into large pieces
  • 1 (6 oz) box chicken-flavored stuffing mix
  • 1 packet (1 oz) ranch seasoning mix
  • 1/2 cup unsalted butter, melted
  • 1/2 cup chicken broth
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • Chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Lightly grease a 9×13-inch baking dish.
  3. Arrange the chicken pieces evenly in the baking dish.
  4. Season with garlic powder and black pepper.
  5. Sprinkle the ranch seasoning evenly over the chicken.
  6. Cover the chicken with the dry stuffing mix.
  7. Drizzle the melted butter evenly over the stuffing.
  8. Pour the chicken broth around the edges of the baking dish without disturbing the topping.
  9. Cover with foil and bake for 35 minutes.
  10. Remove the foil and continue baking for 15–20 minutes until the topping is golden brown and the chicken reaches an internal temperature of 165°F (74°C).
  11. Garnish with parsley and serve warm.
