Chicken Broth Yukon Gold Potatoes

A simple comfort-food side dish featuring tender Yukon Gold potatoes baked in chicken broth and butter until perfectly soft and flavorful.

Ingredients

  • 2 lbs (900 g) Yukon Gold potatoes, cubed
  • 1 cup chicken broth
  • 4 tablespoons butter, melted
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder (optional)
  • 1 tablespoon chopped parsley (optional)

Instructions

  1. Preheat oven to 190°C (375°F).
  2. Place the cubed Yukon Gold potatoes in a ceramic baking dish.
  3. Season with salt, pepper, and garlic powder if using.
  4. Pour the melted butter over the potatoes and toss gently.
  5. Pour the chicken broth evenly into the baking dish.
  6. Cover tightly with aluminum foil.
  7. Bake for 45–55 minutes, or until the potatoes are fork-tender.
  8. Remove the foil and bake for an additional 10 minutes for lightly golden edges.
  9. Sprinkle with parsley before serving.

Optional Additions

  • 1 cup shredded cheddar cheese
  • Crumbled cooked bacon
  • Sour cream for serving
  • Fresh thyme or rosemary
