Chicken Broth Yukon Gold Potatoes
A simple comfort-food side dish featuring tender Yukon Gold potatoes baked in chicken broth and butter until perfectly soft and flavorful.
Ingredients
- 2 lbs (900 g) Yukon Gold potatoes, cubed
- 1 cup chicken broth
- 4 tablespoons butter, melted
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder (optional)
- 1 tablespoon chopped parsley (optional)
Instructions
- Preheat oven to 190°C (375°F).
- Place the cubed Yukon Gold potatoes in a ceramic baking dish.
- Season with salt, pepper, and garlic powder if using.
- Pour the melted butter over the potatoes and toss gently.
- Pour the chicken broth evenly into the baking dish.
- Cover tightly with aluminum foil.
- Bake for 45–55 minutes, or until the potatoes are fork-tender.
- Remove the foil and bake for an additional 10 minutes for lightly golden edges.
- Sprinkle with parsley before serving.

- 1 cup shredded cheddar cheese
- Crumbled cooked bacon
- Sour cream for serving
- Fresh thyme or rosemary
