One Pan Chicken and Rice Bake
My neighbor brought this over, and the rice cooks perfectly right in the pan with the meat. Only 4 simple ingredients make this cozy dinner a weeknight favorite.
Ingredients
- 4 boneless skinless chicken breasts
- 2 cups uncooked instant rice
- 1 can cream of chicken soup
- 2 cups chicken broth
- Salt and black pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Spread uncooked rice evenly into a 9×13 baking dish.
- In a bowl, whisk together cream of chicken soup and chicken broth.
- Pour the mixture over the rice.
- Place chicken breasts on top and season with salt and black pepper.
- Cover tightly with foil.
- Bake for 50-60 minutes until the rice is tender and chicken is fully cooked.
- Let rest for 5 minutes before serving.
Serving Suggestions
- Serve with steamed vegetables
- Add shredded cheese on top before serving
- Pair with a simple green salad
