One Pan Chicken and Rice Bake

My neighbor brought this over, and the rice cooks perfectly right in the pan with the meat. Only 4 simple ingredients make this cozy dinner a weeknight favorite.

Ingredients

  • 4 boneless skinless chicken breasts
  • 2 cups uncooked instant rice
  • 1 can cream of chicken soup
  • 2 cups chicken broth
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Spread uncooked rice evenly into a 9×13 baking dish.
  3. In a bowl, whisk together cream of chicken soup and chicken broth.
  4. Pour the mixture over the rice.
  5. Place chicken breasts on top and season with salt and black pepper.
  6. Cover tightly with foil.
  7. Bake for 50-60 minutes until the rice is tender and chicken is fully cooked.
  8. Let rest for 5 minutes before serving.

Serving Suggestions

  • Serve with steamed vegetables
  • Add shredded cheese on top before serving
  • Pair with a simple green salad

Tip: You can add diced onions or garlic for extra flavor.
