Loaded Potato Rounds

My Irish neighbor brought these to the potluck and the pan was licked clean in minutes. It is so easy with just 4 ingredients.

Ingredients

  • 4 large russet potatoes, sliced into thick rounds
  • 1½ cups shredded cheddar cheese
  • 8 slices bacon, cooked and crumbled
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 220°C (425°F).
  2. Line a baking sheet with foil and lightly grease it.
  3. Toss potato slices with olive oil and arrange in a single layer.
  4. Bake for 25–30 minutes, turning once halfway through, until tender and lightly crisp.
  5. Remove from oven and top each potato round with shredded cheddar cheese.
  6. Sprinkle crumbled bacon evenly over the cheese.
  7. Return to the oven for 5–7 minutes, until the cheese is melted and bubbly.
  8. Serve immediately while hot.

Serving Suggestions

  • Top with sour cream and green onions.
  • Serve as a party appetizer or side dish.
  • Pair with grilled meats or burgers.

Tip: For extra crispy potatoes, soak the slices in cold water for 30 minutes before baking, then dry thoroughly.
