Loaded Potato Rounds
My Irish neighbor brought these to the potluck and the pan was licked clean in minutes. It is so easy with just 4 ingredients.
Ingredients
- 4 large russet potatoes, sliced into thick rounds
- 1½ cups shredded cheddar cheese
- 8 slices bacon, cooked and crumbled
- 2 tablespoons olive oil
Instructions
- Preheat oven to 220°C (425°F).
- Line a baking sheet with foil and lightly grease it.
- Toss potato slices with olive oil and arrange in a single layer.
- Bake for 25ā30 minutes, turning once halfway through, until tender and lightly crisp.
- Remove from oven and top each potato round with shredded cheddar cheese.
- Sprinkle crumbled bacon evenly over the cheese.
- Return to the oven for 5ā7 minutes, until the cheese is melted and bubbly.
- Serve immediately while hot.
Serving Suggestions
- Top with sour cream and green onions.
- Serve as a party appetizer or side dish.
- Pair with grilled meats or burgers.
Tip: For extra crispy potatoes, soak the slices in cold water for 30 minutes before baking, then dry thoroughly.
