Vintage Cheesy Potato Puffs
Found this in my auntās recipe box from the 1960s. These disappeared in minutes at the church potluck.
Ingredients
- 3 cups mashed potatoes
- 1 cup shredded cheddar cheese
- 1 egg, beaten
- 2 tablespoons melted butter
- Salt and black pepper to taste
Instructions
- Preheat oven to 200°C (400°F).
- In a large bowl, combine mashed potatoes, cheddar cheese, egg, butter, salt, and pepper.
- Mix until well blended.
- Shape mixture into golf-ball-sized rounds and place on a lightly greased baking sheet.
- Bake for 20ā25 minutes until golden brown on top.
- For extra browning, broil for 2ā3 minutes at the end.
- Serve warm.
Serving Suggestions
- Serve alongside roast chicken or beef.
- Dip in sour cream or garlic sauce.
- Sprinkle with fresh parsley before serving.
Tip: Leftover mashed potatoes work perfectly for this recipe and give the puffs a fluffy texture inside with a crispy golden crust outside.
