Crispy Cheesy Potato Stacks

My sister shared this 4 ingredient layered side dish and the crispy edges are absolutely incredible.

Ingredients

  • 4 russet potatoes, thinly sliced
  • 2 cups shredded cheddar cheese
  • 1/4 cup melted butter
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • Optional: chopped parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Grease a muffin tin generously with butter or cooking spray.
  3. In a bowl, toss potato slices with melted butter, garlic powder, salt, and pepper.
  4. Layer potato slices into muffin cups, sprinkling cheddar cheese between layers.
  5. Fill each cup almost to the top and press down gently.
  6. Top with extra cheese.
  7. Bake for 40-45 minutes until potatoes are tender and edges are crispy.
  8. Let cool for 5 minutes before removing from the pan.
  9. Garnish with parsley if desired.

  • Serve with steak or roasted chicken
  • Perfect for holiday dinners
  • Great with sour cream or ranch dip

Tip: Use a mandoline slicer for evenly thin potato slices and extra crispy layers.
