Crispy Cheesy Potato Stacks
My sister shared this 4 ingredient layered side dish and the crispy edges are absolutely incredible.
Ingredients
- 4 russet potatoes, thinly sliced
- 2 cups shredded cheddar cheese
- 1/4 cup melted butter
- 1 teaspoon garlic powder
- Salt and black pepper to taste
- Optional: chopped parsley for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Grease a muffin tin generously with butter or cooking spray.
- In a bowl, toss potato slices with melted butter, garlic powder, salt, and pepper.
- Layer potato slices into muffin cups, sprinkling cheddar cheese between layers.
- Fill each cup almost to the top and press down gently.
- Top with extra cheese.
- Bake for 40-45 minutes until potatoes are tender and edges are crispy.
- Let cool for 5 minutes before removing from the pan.
- Garnish with parsley if desired.

Tip: Use a mandoline slicer for evenly thin potato slices and extra crispy layers.
