Slow Cooker White Beans & Potatoes
This humble slow cooker meal is simple, inexpensive, and incredibly comforting. Creamy white beans and tender potatoes simmer together into an old-fashioned farmhouse-style dinner perfect for chilly evenings.
Ingredients
- 3 cans white beans, drained
- 4 medium potatoes, peeled and diced
- 4 cups chicken broth
- 1 small onion, diced (optional)
- 1 teaspoon garlic powder
- Salt and black pepper to taste
- 1 teaspoon dried parsley or Italian seasoning
Instructions
- Add diced potatoes and white beans to the slow cooker.
- Pour in chicken broth.
- Add onion, garlic powder, parsley, salt, and pepper.
- Stir gently to combine.
- Cover and cook on LOW for 6ā7 hours or HIGH for 3ā4 hours until potatoes are tender.
- Serve warm with bread or cornbread.
Serving Tip: Add smoked sausage or ham for extra flavor and protein.
