Slow Cooker White Beans & Potatoes

This humble slow cooker meal is simple, inexpensive, and incredibly comforting. Creamy white beans and tender potatoes simmer together into an old-fashioned farmhouse-style dinner perfect for chilly evenings.

Ingredients

  • 3 cans white beans, drained
  • 4 medium potatoes, peeled and diced
  • 4 cups chicken broth
  • 1 small onion, diced (optional)
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 teaspoon dried parsley or Italian seasoning

Instructions

  1. Add diced potatoes and white beans to the slow cooker.
  2. Pour in chicken broth.
  3. Add onion, garlic powder, parsley, salt, and pepper.
  4. Stir gently to combine.
  5. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until potatoes are tender.
  6. Serve warm with bread or cornbread.
Serving Tip: Add smoked sausage or ham for extra flavor and protein.
