Slow Cooker Beef & Rice Casserole
Description
A hearty slow cooker comfort meal made with ground beef, white rice, creamy soup, and savory seasonings. Simple ingredients turn into a warm, filling dinner perfect for busy nights.
Ingredients
- 1 lb ground beef
- 1 cup uncooked white rice
- 1 can cream of mushroom soup
- 2 cups beef broth
- 1 small onion, diced
- 1 teaspoon garlic powder
- Salt and black pepper to taste
- 1 cup shredded cheddar cheese (optional)
Instructions
- Lightly grease the slow cooker.
- Add raw ground beef and uncooked rice to the slow cooker.
- Mix in diced onion, garlic powder, salt, and black pepper.
- Pour cream of mushroom soup and beef broth over the mixture.
- Stir gently until combined.
- Cover and cook on LOW for 5ā6 hours or HIGH for 3ā4 hours.
- Stir once near the end of cooking.
- Top with cheddar cheese during the last 10 minutes if desired.
- Serve hot and enjoy.
Tips
- Add frozen peas or corn for extra flavor and color.
- Use cream of chicken soup instead of mushroom if preferred.
