Ingredients

  • 4 ears of corn, boiled or grilled, cut into small sections
  • 2 tablespoons mayonnaise
  • 2 tablespoons sour cream or Greek yogurt
  • 1 tablespoon melted butter
  • 1/2 teaspoon chili powder or smoked paprika
  • 1/4 cup grated Parmesan or Cotija cheese
  • Juice of 1/2 lime
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish ๐ŸŒฟ

Instructions

  1. Prepare the corn: Boil or grill the corn pieces until tender and lightly charred. Pat dry.
  2. Mix the sauce: In a small bowl, whisk together mayonnaise, sour cream, butter, lime juice, salt, and pepper.
  3. Coat the corn: Brush or spoon the creamy mixture over each corn piece.
  4. Add toppings: Sprinkle with chili powder and grated cheese.
  5. Garnish & serve: Add chopped cilantro or parsley on top and enjoy warm!
