Slow Cooker Ginger Ale Beef
This easy slow cooker beef recipe transforms simple ingredients into fork-tender, flavorful beef with a lightly sweet and savory gravy. The ginger ale helps tenderize the meat while adding a subtle sweetness that’s perfect served over mashed potatoes, rice, or egg noodles.
Ingredients
- 2½ lbs beef stew meat, cut into cubes
- 1 (12 oz) bottle ginger ale
- 1 large onion, diced
- 1 packet onion soup mix (1 oz)
- 1 tsp garlic powder (optional)
- ½ tsp black pepper
- 2 tbsp cornstarch + 2 tbsp water (optional, for thickening)
Instructions
- Place the beef cubes into the slow cooker.
- Add the diced onion evenly over the beef.
- Sprinkle the onion soup mix and black pepper on top.
- Pour the ginger ale over everything.
- Cover and cook on LOW for 8 hours or HIGH for 4–5 hours, until the beef is tender.
- If you’d like a thicker gravy, mix the cornstarch and water into a slurry. Stir it into the slow cooker during the last 20–30 minutes of cooking and cook until thickened.
- Serve hot over mashed potatoes, rice, or buttered egg noodles.
