Slow Cooker Ginger Ale Beef

This easy slow cooker beef recipe transforms simple ingredients into fork-tender, flavorful beef with a lightly sweet and savory gravy. The ginger ale helps tenderize the meat while adding a subtle sweetness that’s perfect served over mashed potatoes, rice, or egg noodles.

Ingredients

  • 2½ lbs beef stew meat, cut into cubes
  • 1 (12 oz) bottle ginger ale
  • 1 large onion, diced
  • 1 packet onion soup mix (1 oz)
  • 1 tsp garlic powder (optional)
  • ½ tsp black pepper
  • 2 tbsp cornstarch + 2 tbsp water (optional, for thickening)

Instructions

  1. Place the beef cubes into the slow cooker.
  2. Add the diced onion evenly over the beef.
  3. Sprinkle the onion soup mix and black pepper on top.
  4. Pour the ginger ale over everything.
  5. Cover and cook on LOW for 8 hours or HIGH for 4–5 hours, until the beef is tender.
  6. If you’d like a thicker gravy, mix the cornstarch and water into a slurry. Stir it into the slow cooker during the last 20–30 minutes of cooking and cook until thickened.
  7. Serve hot over mashed potatoes, rice, or buttered egg noodles.
