Irish Cabbage & Egg Noodle Casserole
This simple Irish-inspired comfort dish combines buttery egg noodles, tender cabbage, sweet onions, and crispy bacon for a hearty family meal. It’s a budget-friendly recipe that’s perfect for St. Patrick’s Day or any cozy dinner.
Ingredients
- 12 oz wide egg noodles
- 1 small head green cabbage, chopped
- 1 large onion, diced
- 8 slices bacon, chopped
- 2 tbsp butter
- 1 tsp garlic powder
- 1 tsp black pepper
- ½ tsp salt (or to taste)
- 2 tbsp chopped fresh parsley (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Cook the egg noodles until just al dente. Drain and set aside.
- In a large skillet, cook the chopped bacon until crispy. Remove the bacon, leaving about 2 tablespoons of the drippings.
- Add the butter, onion, and cabbage to the skillet. Cook for 10–12 minutes until the cabbage becomes tender and lightly caramelized.
- Season with garlic powder, salt, and black pepper.
- Stir the cooked noodles and crispy bacon into the cabbage mixture until evenly combined.
- Transfer everything to a greased 9×13-inch baking dish.
- Bake uncovered for 20–25 minutes until hot and lightly golden around the edges.
- Sprinkle with fresh parsley before serving if desired.
