This simple Irish-inspired comfort dish combines buttery egg noodles, tender cabbage, sweet onions, and crispy bacon for a hearty family meal. It’s a budget-friendly recipe that’s perfect for St. Patrick’s Day or any cozy dinner.

Ingredients

  • 12 oz wide egg noodles
  • 1 small head green cabbage, chopped
  • 1 large onion, diced
  • 8 slices bacon, chopped
  • 2 tbsp butter
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • ½ tsp salt (or to taste)
  • 2 tbsp chopped fresh parsley (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook the egg noodles until just al dente. Drain and set aside.
  3. In a large skillet, cook the chopped bacon until crispy. Remove the bacon, leaving about 2 tablespoons of the drippings.
  4. Add the butter, onion, and cabbage to the skillet. Cook for 10–12 minutes until the cabbage becomes tender and lightly caramelized.
  5. Season with garlic powder, salt, and black pepper.
  6. Stir the cooked noodles and crispy bacon into the cabbage mixture until evenly combined.
  7. Transfer everything to a greased 9×13-inch baking dish.
  8. Bake uncovered for 20–25 minutes until hot and lightly golden around the edges.
  9. Sprinkle with fresh parsley before serving if desired.
