Slow Cooker Cheesy Beef & Macaroni
This hearty Slow Cooker Cheesy Beef & Macaroni is the ultimate comfort food. Ground beef, elbow macaroni, tomatoes, beef broth, and plenty of melted cheddar cook together into a rich, satisfying dinner that’s perfect for busy weeknights.
Ingredients
- 2 pounds lean ground beef
- 2 cups uncooked elbow macaroni
- 2 cups beef broth
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 can (10.5 oz) condensed cheddar cheese soup
- 2 cups shredded sharp cheddar cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- Salt and black pepper, to taste
- Fresh parsley for garnish (optional)
Instructions
- Lightly grease the slow cooker.
- Add the ground beef and break it into large chunks.
- Stir in the diced tomatoes, beef broth, cheddar cheese soup, garlic powder, onion powder, Italian seasoning, salt, and pepper.
- Cover and cook on HIGH for 2½ hours or LOW for 4–5 hours.
- Break the beef apart with a spoon and stir well.
- Add the uncooked elbow macaroni and mix to coat.
- Cook on HIGH for another 25–35 minutes, stirring once, until the pasta is tender.
- Stir in 1½ cups of shredded cheddar cheese until melted.
- Sprinkle the remaining cheese over the top, cover for 5 minutes, and allow it to melt.
- Garnish with fresh parsley and serve hot.
