Slow Cooker Cheesy Beef & Macaroni

This hearty Slow Cooker Cheesy Beef & Macaroni is the ultimate comfort food. Ground beef, elbow macaroni, tomatoes, beef broth, and plenty of melted cheddar cook together into a rich, satisfying dinner that’s perfect for busy weeknights.

Ingredients

  • 2 pounds lean ground beef
  • 2 cups uncooked elbow macaroni
  • 2 cups beef broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 can (10.5 oz) condensed cheddar cheese soup
  • 2 cups shredded sharp cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Lightly grease the slow cooker.
  2. Add the ground beef and break it into large chunks.
  3. Stir in the diced tomatoes, beef broth, cheddar cheese soup, garlic powder, onion powder, Italian seasoning, salt, and pepper.
  4. Cover and cook on HIGH for 2½ hours or LOW for 4–5 hours.
  5. Break the beef apart with a spoon and stir well.
  6. Add the uncooked elbow macaroni and mix to coat.
  7. Cook on HIGH for another 25–35 minutes, stirring once, until the pasta is tender.
  8. Stir in 1½ cups of shredded cheddar cheese until melted.
  9. Sprinkle the remaining cheese over the top, cover for 5 minutes, and allow it to melt.
  10. Garnish with fresh parsley and serve hot.
