3-Ingredient Parmesan Baked Cod
This incredibly easy baked cod is crispy on the outside, tender and flaky on the inside, and ready in under 30 minutes. With just three simple ingredients, it’s the perfect weeknight dinner that tastes like it came from a seafood restaurant.
Ingredients
- 6 cod fillets (about 6 oz each)
- 1 cup grated Parmesan cheese
- ½ cup mayonnaise
- 1 tsp paprika (optional, for color)
- Salt and black pepper, to taste
- Cooking spray or a little olive oil
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with foil and lightly grease it.
- Pat the cod fillets dry and season lightly with salt and black pepper.
- In a small bowl, combine the mayonnaise and grated Parmesan until smooth.
- Spread the Parmesan mixture evenly over the top of each cod fillet.
- Sprinkle with paprika if desired.
- Bake for 15–18 minutes, depending on thickness, until the fish flakes easily with a fork.
- For a golden crust, broil for 1–2 minutes at the end of cooking.
- Serve immediately with lemon wedges.
