Homestyle Chicken Noodle Soup Recipe
Ingredients:
- 2 tablespoons unsalted butter
- 1 onion, diced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 8 cups chicken stock
- 2 bay leaves
- Kosher salt and freshly ground black pepper, to taste
- 2 ½ pounds bone-in, skinless chicken breasts
- 2 ½ cups wide egg noodles
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons fresh dill, chopped
- 1 tablespoon freshly squeezed lemon juice (adjust to taste)
Instructions:
- In a large stockpot or Dutch oven, melt the butter over medium heat. Add the diced onion, carrots, and celery. Cook, stirring occasionally, for 3-4 minutes until the vegetables are tender.
- Add the minced garlic and sauté for about 1 minute, until fragrant.
- Pour in the chicken stock and add the bay leaves. Season with salt and pepper to taste.
- Place the chicken breasts into the pot and bring to a boil. Reduce the heat to low, cover, and simmer for 30-40 minutes, or until the chicken is fully cooked.
- Once the chicken is cooked, remove it from the pot and allow it to cool slightly. Dice the chicken into bite-sized pieces, discarding the bones.
- Return the diced chicken to the pot, along with the egg noodles. Cook for an additional 6-7 minutes, or until the noodles are tender.
- Remove the soup from heat and stir in the chopped parsley, dill, and freshly squeezed lemon juice. Adjust the seasoning with additional salt and pepper if needed.
- Serve the soup immediately and enjoy its comforting flavors.
