Creamy Chicken & Rice Bake

This creamy chicken casserole is an easy, family-friendly dinner made with tender chicken, fluffy rice, and a rich cream of chicken sauce. With just a handful of pantry ingredients, it bakes into a warm, comforting meal that’s perfect for busy weeknights.

Ingredients

  • 2 lbs boneless, skinless chicken breasts, diced
  • 2 cups uncooked long-grain white rice
  • 2 cans (10.5 oz each) cream of chicken soup
  • 2 cups chicken broth
  • 1½ cups shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika
  • ½ tsp black pepper
  • ½ tsp salt (optional)
  • 2 tbsp chopped fresh parsley (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch ceramic baking dish.
  2. Spread the uncooked rice evenly in the bottom of the dish.
  3. Arrange the diced chicken evenly over the rice.
  4. In a bowl, whisk together the cream of chicken soup, chicken broth, garlic powder, onion powder, paprika, salt, and black pepper.
  5. Pour the soup mixture evenly over the chicken and rice.
  6. Cover tightly with aluminum foil.
  7. Bake for 60 minutes.
  8. Remove the foil, sprinkle the shredded cheddar cheese over the top, and bake uncovered for an additional 10–15 minutes until the cheese is melted and the rice is tender.
  9. Let the casserole rest for 5–10 minutes before serving. Garnish with chopped parsley if desired.
