Baked Potato and Ground Beef Casserole
Ingredients:
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup cheddar cheese, shredded
- 1 cup mozzarella cheese, shredded
- 1 pound ground beef
- 4 cups potatoes, diced
- 1 can (10.75 ounces) condensed mushroom soup
- 1/2 cup milk
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley, finely chopped (optional, for garnish)
Instructions:
- Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish and set it aside.
- Cook the ground beef in a skillet over medium heat until browned, breaking it into small crumbles. Drain any excess grease.
- Add the onion and garlic to the skillet with the beef. Sauté for about 5 minutes, until the onions become soft and translucent.
- In a large mixing bowl, combine the beef mixture, diced potatoes, cheddar cheese, mozzarella cheese, mushroom soup, milk, paprika, salt, and pepper. Stir until all the ingredients are well incorporated.
- Transfer the mixture into the prepared baking dish, spreading it evenly.
- Cover with aluminum foil and bake for 45 minutes in the preheated oven.
- Uncover the dish and continue baking for an additional 15-20 minutes, or until the potatoes are tender and the cheese is melted and golden brown.
- Remove from the oven and let it cool slightly before serving. If desired, garnish with freshly chopped parsley and serve warm.
