Ingredients

  • 700g (1.5 lbs) beef chunks (stew meat)
  • 1 cup vegetable juice (like tomato or mixed vegetable juice)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 potatoes, chopped (optional)
  • 2 carrots, sliced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

Place the beef chunks into the slow cooker.

Add chopped onion, garlic, potatoes, and carrots on top of the beef.

Pour the vegetable juice evenly over everything.

Season with salt and black pepper.

Cover and cook on low for 6–8 hours or on high for 3–4 hours until the beef is tender and the flavors are well combined.
