Irish Sausage, Potato & Bacon Slow Cooker
A hearty Irish-inspired comfort meal, simple and full of flavor. This dish combines juicy sausages, tender potatoes, and crispy bacon in a rich, savory broth—perfect for a cozy family dinner.
Ingredients
- 4–6 sausages
- 4 medium potatoes, sliced
- 150g bacon, chopped
- 1 onion, chopped
- 1 cup broth (chicken or beef)
- Salt and black pepper to taste
Instructions
Place the sliced potatoes at the bottom of the slow cooker.
Add chopped onion and bacon pieces over the potatoes.
Lay the sausages on top.
Pour the broth over everything and season with salt and black pepper.
Cover and cook on low for 6–7 hours or on high for 3–4 hours until the potatoes are tender and the sausages are fully cooked.
Serving
Serve hot with crusty bread or enjoy it as a complete one-pot meal.
