Slow Cooker Tender Beef with Vegetables

Ingredients:

  • 1 kg beef roast
  • 3 carrots (cut into chunks)
  • 1 onion (sliced)
  • 1 cup beef broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cloves garlic (optional)

Instructions:

  1. Place onions and carrots at the bottom of the slow cooker.
  2. Season the beef with salt and black pepper.
  3. Put the beef on top of the vegetables.
  4. Add garlic if using.
  5. Pour beef broth over everything.
  6. Cover and cook on LOW for 8 hours or HIGH for 4–5 hours.
  7. Serve hot with the juices and vegetables.

Important Tips:

  • Cook on LOW for best tenderness.
  • Do not open the lid during cooking.
  • Let the meat rest for 5–10 minutes before slicing.
  • You can add potatoes for a complete meal.

  • Serve with mashed potatoes
  • Serve with rice
  • Great with fresh bread
