Slow Cooker Corned Beef with Cabbage & Cheese

A rich and comforting classic that melts in your mouth. This slow cooker recipe combines tender corned beef with soft cabbage and a touch of melted cheese for a simple yet irresistible meal.

Ingredients

  • 1 kg (2–3 lb) corned beef brisket
  • 1 small head cabbage, shredded
  • 1 cup beef broth or water
  • 1 cup shredded cheese (cheddar or Swiss)
  • Black pepper to taste

Instructions

Place the shredded cabbage into the bottom of the slow cooker.

Lay the corned beef on top of the cabbage.

Add the beef broth to keep everything moist while cooking.

Season lightly with black pepper.

Cover and cook on low for 7–8 hours or on high for 4–5 hours until the beef is very tender.

Once cooked, shred the beef directly in the slow cooker and mix it with the cabbage.

Sprinkle the shredded cheese over the top and let it melt before serving.

Serving

Serve hot on its own or with bread, potatoes, or rice.
