Mexican Street Corn Bites 🌽🔥
Ingredients
- 4 ears of corn, boiled or grilled, cut into small sections
- 2 tablespoons mayonnaise
- 2 tablespoons sour cream or Greek yogurt
- 1 tablespoon melted butter
- 1/2 teaspoon chili powder or smoked paprika
- 1/4 cup grated Parmesan or Cotija cheese
- Juice of 1/2 lime
- Salt and pepper to taste
- Fresh cilantro or parsley for garnish 🌿
Instructions
- Prepare the corn: Boil or grill the corn pieces until tender and lightly charred. Pat dry.
- Mix the sauce: In a small bowl, whisk together mayonnaise, sour cream, butter, lime juice, salt, and pepper.
- Coat the corn: Brush or spoon the creamy mixture over each corn piece.
- Add toppings: Sprinkle with chili powder and grated cheese.
- Garnish & serve: Add chopped cilantro or parsley on top and enjoy warm!
