โœจ Ingredients:

  • 3 lbs beef chuck roast (Halal-certified) ๐Ÿ–
  • 2 tbsp olive oil
  • 1 large onion, chopped ๐Ÿง…
  • 3 garlic cloves, minced ๐Ÿง„
  • 3 large carrots, peeled & cut into chunks ๐Ÿฅ•
  • 2 lbs baby potatoes, halved ๐Ÿฅ”
  • 3 cups beef broth
  • 2 tbsp tomato paste
  • 1 tsp dried thyme ๐ŸŒฟ
  • 1 tsp rosemary ๐ŸŒฟ
  • Salt & pepper to taste ๐Ÿง‚

๐Ÿฅ˜ Instructions:

  1. Season the beef with salt and pepper. Sear in olive oil until browned on all sides.
  2. Add onion and garlic to the pot, sautรฉ until fragrant.
  3. Stir in tomato paste, thyme, rosemary, and beef broth.
  4. Add carrots and potatoes, cover tightly, and cook:
    • Oven: 325ยฐF (160ยฐC) for 3โ€“4 hours
    • Slow cooker: Low 8 hours / High 5 hours
  5. Once fork-tender, shred the beef and serve with veggies and sauce. ๐ŸŒฟ
