🍖 Slow Cooker Pot Roast

📝 Ingredients

  • 3–4 lbs beef chuck roast
  • 4 carrots, peeled and chopped into chunks
  • 4 potatoes, peeled and quartered
  • 1 onion, quartered
  • 4 garlic cloves, minced
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt & black pepper, to taste
  • 2 tbsp olive oil

🔥 Directions

  1. Season the beef roast generously with salt and black pepper.
  2. Heat olive oil in a skillet and sear the roast on all sides until browned.
  3. Place carrots, potatoes, and onion at the bottom of the slow cooker.
  4. Set the seared roast on top of the vegetables.
  5. Add minced garlic, thyme, rosemary, Worcestershire sauce, and beef broth.
  6. Cover and cook on LOW for 8–9 hours or HIGH for 4–5 hours, until roast is tender.
  7. Shred or slice the beef and serve with the vegetables and broth.
