Mediterranean Chicken Zucchini Bake 🍗🍅🥒
Ingredients
- 3 boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 medium zucchinis, sliced into rounds
- 1 pint cherry tomatoes, halved
- 1 red bell pepper, diced
- 1/2 red onion, thinly sliced
- 3 garlic cloves, minced
- 1/4 cup olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- Salt and pepper, to taste
- 1/2 cup crumbled feta cheese
- Fresh parsley, chopped (optional)
Instructions
- Preheat oven: to 400°F (200°C). Lightly grease a baking dish with olive oil.
- Combine ingredients: In a large bowl, mix chicken, zucchini, cherry tomatoes, bell pepper, onion, and garlic.
- Season: Drizzle with olive oil and sprinkle with oregano, basil, thyme, salt, and pepper. Toss until evenly coated.
- Bake: Transfer the mixture to the prepared baking dish and bake uncovered for 25–30 minutes, or until the chicken is cooked through and veggies are tender.
- Add cheese: Sprinkle crumbled feta on top and bake an additional 5 minutes, until slightly melted.
- Garnish: Sprinkle fresh parsley before serving.
