Herb-Infused Fried Potato Bites
Ingredients
- 4 large potatoes
- 2 cups of fresh chopped parsley
- 1 cup of chicken broth or finely chopped green onions
- 2 tablespoons of cornstarch
- 1 teaspoon of salt (or to taste)
- Ā½ teaspoon of black pepper
- Oil for frying
Preparation
Preparing the Potatoes:
- Peel and grate the potatoes. Place the grated potatoes in a strainer and rinse them thoroughly.
- Transfer the potatoes to a paper towel or cloth and squeeze out as much moisture as possible.
Mixing the Ingredients:
- In a large bowl, combine the grated potatoes, chopped parsley, green onions (or chives), and cornstarch.
- Season with salt and black pepper. Mix thoroughly until all ingredients are well incorporated.
Forming the Bites:
- Spread the mixture onto a flat surface or large plate, forming a layer about Ā¼ inch thick.
- Cut the mixture into small squares, roughly 1 inch on each side.
Frying:
- Heat oil in a skillet or frying pan to 350Ā°F (175Ā°C).
- Fry the potato squares in batches, cooking each side for about 2-3 minutes or until golden and crispy.
- Remove the fried squares and place them on paper towels to drain excess oil.
Serving:
- Serve the warm, crispy potato bites as a side dish or a snack.
