🥘 Hearty Beef Stew with Rich Sauce

Ingredients

  • 2 lbs beef stew meat, cut into cubes
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 red bell peppers, diced
  • 3 tbsp flour (for thickening)
  • 2 cups beef broth
  • 1 cup crushed tomatoes
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt & pepper, to taste

Instructions

  1. Sear the Beef: Heat olive oil in a large pot over medium-high heat. Add beef cubes, browning on all sides. Remove and set aside.
  2. Sauté Veggies: In the same pot, add onions, garlic, and peppers. Cook until softened.
  3. Thicken Sauce: Stir in flour and cook for 1 minute, stirring constantly.
  4. Add Liquids: Pour in beef broth and crushed tomatoes. Stir well to avoid lumps.
  5. Season: Add paprika, thyme, bay leaf, salt, and pepper. Return beef to the pot.
  6. Simmer: Cover and cook on low heat for 1.5–2 hours, or until beef is tender and sauce is thickened. Stir occasionally.
  7. Serve: Remove bay leaf, adjust seasoning, and serve hot with bread, rice, or mashed potatoes.
