Ground Beef & Potato Casserole 🥔🍖
Ingredients
- 1 ½ lbs ground beef
- 5 medium potatoes, diced
- 1 green & 1 red bell pepper, diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup tomato sauce
- ½ cup beef broth
- 1 tsp smoked paprika
- 1 tsp oregano, ½ tsp chili powder
- Salt & pepper, to taste
- 2 tbsp olive oil
- 1 cup cheddar cheese (optional)
- Fresh parsley, chopped
Instructions
- Preheat: 400°F (200°C). Grease a baking dish.
- Cook beef: Brown beef in skillet; drain. Add onion, garlic, and peppers. Sauté 3–4 minutes.
- Season: Mix in tomato sauce, broth, and spices. Simmer 5 minutes.
- Assemble: Layer potatoes and beef mixture in baking dish. Cover with foil.
- Bake: 35–40 minutes, until potatoes are tender. Add cheese and bake uncovered 5–10 minutes more.
- Serve: Garnish with parsley. Serve hot!
Tips
- Swap beef for ground turkey or chicken for a lighter version.
- Add ½ cup corn or peas for extra texture.
- Leftovers reheat beautifully the next day — even better flavor!
