🥒 Crispy Fried Zucchini Coins

Golden, crunchy on the outside and tender on the inside! These kid-approved zucchini bites
disappear fast — simple ingredients, big flavor, and perfect as a snack or side dish.

Ingredients

  • 2 medium zucchini, sliced into ¼-inch rounds
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 3/4 cup breadcrumbs or panko
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • Salt & black pepper to taste
  • Oil for frying (vegetable or canola)
  • Chopped green onions or parsley (optional)

Instructions

  1. Pat zucchini slices dry with paper towels.
  2. Set up three bowls: flour in one, beaten eggs in another, and breadcrumbs mixed with Parmesan, garlic powder, salt, and pepper in the third.
  3. Dip each zucchini slice into flour, then egg, then breadcrumb mixture.
  4. Heat oil in a skillet over medium heat.
  5. Fry zucchini in batches for 2–3 minutes per side until golden brown.
  6. Remove and drain on paper towels.
  7. Garnish with green onions or parsley if desired.

Serving Tip: Serve warm with ranch dressing, garlic aioli, or ketchup.
