Ingredients:
For the Chicken Nuggets:
- 1 Ā½ pounds of chicken breasts (about 3 large breasts)
- 2 large eggs
- ā cup mayonnaise
- ā cup all-purpose flour, cornstarch, or gluten-free potato starch
- 4 ounces mozzarella cheese (about 1 ā cups, grated)
- 1 Ā½ teaspoons fresh dill, finely chopped
- Ā½ teaspoon salt (or to taste)
- ā teaspoon black pepper
- 2 tablespoons light olive oil (or any high-heat cooking oil) for frying
For the Garlic Aioli (Optional):
- ā cup mayonnaise
- 1 clove garlic, pressed
- Ā½ tablespoon lemon juice
- Ā¼ teaspoon salt
- ā teaspoon black pepper
Preparation:
- Using a sharp knife, slice the chicken breasts into ā -inch thick pieces and place them into a large mixing bowl. (Tip: Slightly frozen chicken breasts are easier to slice evenly.)
- In the mixing bowl, add the remaining ingredients: eggs, mayonnaise, flour, grated mozzarella, chopped dill, salt, and pepper. Stir until well combined. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight for best results.
