  • 1 ½ pounds of chicken breasts (about 3 large breasts)
  • 2 large eggs
  • ⅓ cup mayonnaise
  • ⅓ cup all-purpose flour, cornstarch, or gluten-free potato starch
  • 4 ounces mozzarella cheese (about 1 ⅓ cups, grated)
  • 1 ½ teaspoons fresh dill, finely chopped
  • ½ teaspoon salt (or to taste)
  • ⅛ teaspoon black pepper
  • 2 tablespoons light olive oil (or any high-heat cooking oil) for frying

For the Garlic Aioli (Optional):

  • ⅓ cup mayonnaise
  • 1 clove garlic, pressed
  • ½ tablespoon lemon juice
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper

Preparation:

  1. Using a sharp knife, slice the chicken breasts into ⅓-inch thick pieces and place them into a large mixing bowl. (Tip: Slightly frozen chicken breasts are easier to slice evenly.)
  2. In the mixing bowl, add the remaining ingredients: eggs, mayonnaise, flour, grated mozzarella, chopped dill, salt, and pepper. Stir until well combined. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight for best results.
