📝 Ingredients
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg (optional)
- 2 large eggs
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 1/4 cup applesauce (or extra 1/4 cup oil)
- 1 tsp vanilla extract
- 1 1/2 cups grated carrots
- 1/2 cup chopped walnuts or pecans (optional)
- 1/2 cup raisins (optional)
✨ Cream Cheese Frosting
- 4 oz cream cheese, softened
- 2 tbsp butter, softened
- 1 cup powdered sugar
- 1/2 tsp vanilla extract
🔥 Instructions
- Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper.
- In a bowl, whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, whisk eggs, sugar, oil, applesauce, and vanilla.
- Add the dry ingredients to the wet ingredients and mix gently.
- Fold in grated carrots, nuts, and raisins.
- Pour the batter into the loaf pan and bake 50–60 minutes or until a toothpick comes out clean.
- Let the loaf cool completely.
- Beat cream cheese, butter, powdered sugar, and vanilla until smooth.
- Spread frosting generously on top of the cooled loaf.
