📝 Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg (optional)
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1/4 cup applesauce (or extra 1/4 cup oil)
  • 1 tsp vanilla extract
  • 1 1/2 cups grated carrots
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup raisins (optional)

✨ Cream Cheese Frosting

  • 4 oz cream cheese, softened
  • 2 tbsp butter, softened
  • 1 cup powdered sugar
  • 1/2 tsp vanilla extract

🔥 Instructions

  1. Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper.
  2. In a bowl, whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk eggs, sugar, oil, applesauce, and vanilla.
  4. Add the dry ingredients to the wet ingredients and mix gently.
  5. Fold in grated carrots, nuts, and raisins.
  6. Pour the batter into the loaf pan and bake 50–60 minutes or until a toothpick comes out clean.
  7. Let the loaf cool completely.
  8. Beat cream cheese, butter, powdered sugar, and vanilla until smooth.
  9. Spread frosting generously on top of the cooled loaf.
