Baked Potato and Ground Beef Casserole


Ingredients:

  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 1 pound ground beef
  • 4 cups potatoes, diced
  • 1 can (10.75 ounces) condensed mushroom soup
  • 1/2 cup milk
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley, finely chopped (optional, for garnish)

Instructions:

  1. Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish and set it aside.
  2. Cook the ground beef in a skillet over medium heat until browned, breaking it into small crumbles. Drain any excess grease.
  3. Add the onion and garlic to the skillet with the beef. Sauté for about 5 minutes, until the onions become soft and translucent.
  4. In a large mixing bowl, combine the beef mixture, diced potatoes, cheddar cheese, mozzarella cheese, mushroom soup, milk, paprika, salt, and pepper. Stir until all the ingredients are well incorporated.
  5. Transfer the mixture into the prepared baking dish, spreading it evenly.
  6. Cover with aluminum foil and bake for 45 minutes in the preheated oven.
  7. Uncover the dish and continue baking for an additional 15-20 minutes, or until the potatoes are tender and the cheese is melted and golden brown.
  8. Remove from the oven and let it cool slightly before serving. If desired, garnish with freshly chopped parsley and serve warm.
