Baked Chicken Thighs Recipe
Ingredients:
- 4 onions, peeled and quartered
 - 60 ml (¼ cup) olive oil
 - 4 chicken thighs, skin-on
 - 8 unpeeled garlic cloves
 - 45 ml (3 tbsp) chopped coriander
 - Juice of 1 lime
 - 10 ml (2 tsp) cracked black pepper
 - 30 ml (2 tbsp) honey
 - Salt, to taste
 
Preparation:
- Preheat the Oven: Position the oven rack in the center and preheat to 200°C (400°F).
 - Caramelize the Onions: In a skillet over medium-high heat, add 30 ml (2 tsp) of olive oil and caramelize the quartered onions until golden brown.
 - Combine Ingredients: In a large baking dish, mix the chicken thighs with the caramelized onions, unpeeled garlic cloves, chopped coriander, lime juice, cracked black pepper, and salt. Drizzle the thighs with honey.
 - Bake: Place the dish in the preheated oven and bake for 1 hour, or until the chicken easily pulls away from the bone. Baste the thighs with the pan juices halfway through cooking for added flavor.
 - Serve: Serve the baked chicken thighs alongside pineapple and pepper ketchup (see recipe) and a side of green vegetables, such as sautéed spinach.
