Cucumber Bites with Herbed Cream Cheese & Tomato

At our recent gathering, these cucumber bites disappeared within 30 minutes, a testament to their undeniable appeal. The name alone—Cucumber Bites with Herbed Cream Cheese & Tomato—evokes the charm of a sunlit Mediterranean coast, where culinary simplicity meets the freshest ingredients. This appetizer offers a delightful sensory experience: the refreshing crunch of cucumber, the richness of herbed cream cheese, and the juicy burst of tomato.

Whether for a sophisticated dinner party or a casual picnic, this dish adapts effortlessly to any setting. Each bite harmoniously combines flavors and textures, providing a crisp contrast to more indulgent fare such as a meticulously curated cheese and charcuterie board.

Ingredients:

  • 2 English cucumbers, sliced into 1/2-inch discs
  • 1 pint cherry or grape tomatoes, whole or halved
  • Herb spread (store-bought or see recipe below)

For the Herb Spread:

  • 16 ounces cream cheese, softened
  • 1/2 cup fresh Parmesan, finely grated
  • 1/4 cup sour cream
  • 1/4 cup fresh parsley, minced
  • 2 garlic cloves, finely minced
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 2 teaspoons dill, chopped
  • 1/2 teaspoon sea salt

Preparation:

  1. To prepare the herb spread, whisk together all ingredients in a bowl until the mixture is creamy and smooth.
  2. Using a melon baller, hollow out a small section of each cucumber slice.
  3. Generously spread or pipe the herbed cream cheese onto each cucumber disc.
  4. Top each bite with a cherry tomato, either whole or halved. For a touch of elegance, garnish with a small parsley leaf.
  5. Chill the prepared bites in the refrigerator until ready to serve.

Serve and revel in the symphony of Mediterranean flavors with every bite.
