🥒 Crispy Fried Zucchini Coins
Golden, crunchy on the outside and tender on the inside! These kid-approved zucchini bites
disappear fast — simple ingredients, big flavor, and perfect as a snack or side dish.
Ingredients
- 2 medium zucchini, sliced into ¼-inch rounds
- 1/2 cup all-purpose flour
- 2 large eggs
- 3/4 cup breadcrumbs or panko
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- Salt & black pepper to taste
- Oil for frying (vegetable or canola)
- Chopped green onions or parsley (optional)
Instructions
- Pat zucchini slices dry with paper towels.
- Set up three bowls: flour in one, beaten eggs in another, and breadcrumbs mixed with Parmesan, garlic powder, salt, and pepper in the third.
- Dip each zucchini slice into flour, then egg, then breadcrumb mixture.
- Heat oil in a skillet over medium heat.
- Fry zucchini in batches for 2–3 minutes per side until golden brown.
- Remove and drain on paper towels.
- Garnish with green onions or parsley if desired.
Serving Tip: Serve warm with ranch dressing, garlic aioli, or ketchup.
