Pigs in a Blanket Breakfast Rolls
Ingredients:
- 8–10 breakfast sausages
- 1 cup flour
- 1 cup milk
- 2 large eggs
- 1 tablespoon sugar
- Pinch of salt
- Butter for cooking
- Maple syrup for serving (optional)
- Chopped parsley for garnish (optional)
Instructions:
- Cook the breakfast sausages in a pan until browned and cooked through. Set aside.
- In a bowl, whisk together the eggs, milk, flour, sugar, and salt until smooth.
- Heat a little butter in a skillet over medium heat.
- Pour a thin layer of batter into the skillet. Place one sausage at the edge and roll it as the pancake cooks.
- Continue rolling until wrapped and golden. Repeat with remaining sausages.
- Serve warm with maple syrup and garnish with parsley.
