Pigs in a Blanket Breakfast Rolls

Ingredients:

  • 8–10 breakfast sausages
  • 1 cup flour
  • 1 cup milk
  • 2 large eggs
  • 1 tablespoon sugar
  • Pinch of salt
  • Butter for cooking
  • Maple syrup for serving (optional)
  • Chopped parsley for garnish (optional)

Instructions:

  1. Cook the breakfast sausages in a pan until browned and cooked through. Set aside.
  2. In a bowl, whisk together the eggs, milk, flour, sugar, and salt until smooth.
  3. Heat a little butter in a skillet over medium heat.
  4. Pour a thin layer of batter into the skillet. Place one sausage at the edge and roll it as the pancake cooks.
  5. Continue rolling until wrapped and golden. Repeat with remaining sausages.
  6. Serve warm with maple syrup and garnish with parsley.
